This Fish Healthy?

I was at the LFS today and i saw a vampire tang (very pretty at that) but every min or so it was going up to take air in. i didnt see why thoiugh cos they had 2 air stones blowing bubbles into the small tank. And how fast should they be breathing as it looked fine i thought but what is it as i wanted to see if my fish were breathing right.
 
Im not sure that the behaviour you witnessed is taking in air. I have an orange shoulder tang ( a close relative) and it has the oddest behaviour. It will go to the surface and look like its gulping like a Betta, gourami or goldfish. None of my other tangs do this, neither do any other of my fish. Im not sure if its trying to get small bits of food that it has learnt might be floating on the surface etc as i have noticed it do this even more whilst i am feeding them.
