Stocking ideas

Hello there! I have just gotten a new 55 gallon fish tank a month ago, and it has been fully cycled. I already have fish in there that I put after the first week. I am fairly experienced owner, as I have had many tanks before, and many types of fish. I have never owned a tank this big, so im wondering if my stock list would work out, if they would all be compatible, etc. It has live plants, and quite a few hiding spaces. I already have seven guppies (not intentionally, I accidentally bred all of them... but now females and males are separated), two zebra danios, and two plates in there. These are just the fish from my previous tank. Here is my stocking list,

7 guppies,
3 platties,
5 zebra danios,
5 celestial pearl danios,
2 golden honey gouramis,
2 red honey gouramis,
3 hillstream loaches.

Im wondering if these are at all compatible, although I know some already are. Is it too overstocked? Im planning on keeping 4 or 5 guppies in end, im just keeping them until they die. They are already fairly old, I'd say 2-3 years. Could I add more celestials? Maybe another platy?

It is around 12-18 dGH. Hard water. I have a water softener pillow that I use, because the water here is extremely hard. probably around 18-25 dGH. So If I would need softer water, I can easily lower it, or do a water change if I need it higher. The pillow if very effective, I must say.

I would like you say keep them until your stock starts to thin out then start to add , I hate stocking as I either under stock or over stock don’t think iv had it right yet lol

So you're saying I should just wait a while? Is there a reason for that? I don't have a rush at all to get more fish, just wondering.
