So I currently have mollies in a 29 gallon tank, but I recently learned that I have very soft water (6 dGH). So I plan on rehoming them as soon as possible.

Once the mollies are gone, I really want some corydoras and plan on getting 9-12 of them for the tank. But besides the corys, I am not sure what else would thrive in those water conditions. I like the dwarf gouramis but I am not set on them, so any ideas would be greatly appreciated!

Dwarf gourami is known to carry the iridovirus, and unless you can obtain them from a reliable breeder direct, I would not consider them. Honey Gourami are similar in size and less problematic, if you want gourami.

With respect to your excellent water parameters, almost any fish from South America and SE Asia is worth considering, with a very few exceptions. Tetras, hatchetfish, pencilfish, rasboras would all work; danios and barbs are rather more active and longer tanks are better. But that is still a lot of different fish. And all will bee compatible with cories.

A nice group of Neon Tetras would be nice. I have 8 in my 29g tank, and they are really happy. :)

From what I know the gouramis both dwarf and honey will. Never heard of neons eating shrimp
I concur on the Gourami’s...

However, I have witnessed my neon tetras eating baby shrimp. If your tank is densely planted, you will not have this issue.

Virtually all fish will eat baby shrimps even if they leave the adults alone. Even cories will eat babies.
