I'm looking at getting shrimp and was wondering if there is a limit to how many you can have in a 60L tank?

Depends, if you go with crystals or cherries, I'd get 10 - 15, only on the basis that they breed like bunnies and you would have treble that amount in no time.

Amano shrimp, I would personally say 6-8; they are a good clean up crew but they poop more than anything I have ever seen!

Quite a few actually. Shrimp have a small bio load letting you add greater numbers. Say you have 5 two inch fish. They produce more waste than 5 one and a half inch fish. Most shrimp produce less waste than a 1 inch fish.

One note about keeping shrimp though, they tend to multiply if you keep them correctly. I wouldn't fully stock your tank.

I'm keeping a shrimp only tank but had a disaster (presumably due to sensitive shrimp reacting to my tap water). I've now switched to bottled water and aren't having problems.

Eitherways I'd start with around 20 shrimp and go from there. As drobbyb said, most species will reproduce quite readily so 20 soon becomes more. :)
