Can I put any old rock in my tank if I wash it with tank water first?

when using rocks in aquaria it is good to use non-porous rock as they contain no bad bacterias. you should wash them with a hard scrub to get rid of any dirt/algae left on them.

Would slate work?

Yes slate would work, slate isn't a porous a rock.
but make sure that there are no sharp edges because it can be a harmful to the fish if the catch themselves on the rocks

copper does sound cool, but i think it's bad for inverts ?

Copper is indeed bad for inverts

best give new rocks a good scrub using a new scrubber and pour on boiling water.

I think it would be ok to add whatever type of rock you want as long as you clean it first. I know people say its best not to use porus rock but I use lave rock and it looks really cool under water, it does collect algae easy so my otos are always happy sucking it off.
