Pomacea snail living off only rotting material?

I haven’t but one Time I was changing water in my tank and I had my snail in a bowl I don’t know how I forgot but I did they where behind my rack in the bowl with a little food and lived in there for like 3 weeks and it’s still alive! I feel so bad that it happed I don’t even get how I forgot but I just did

oh yeah also what is the water parameter you can test to see if their shells will rot?
