pretty sure they were honey gourami (i know i can add only one male)

You should be fine with honeys. I have harlequins and a dwarf gourami (just got it yesterday ) and they seem to get on great.

Then the sky is the limit! Get as many as you'd like. Just don't overload your biofilter by adding them all at once.
