I tied some new java moss down the length of various protruding pieces of wood in my tank, but I think it looks really lame.

I tied it quite lightly, so that most of the moss is free, not pinned down, as I thought this would be better for it. However, it's quite spindley like a bunch of noodles(!) whereas I was hoping to get a nice thick sort of bush that I can trim. I just need some advice on how you get it to fill out nice and thick, but at the same time keep it healthy and in control.

I bought javamoss 3 weeks ago, it does take some time to get used to new water , then it needs light/co2/nutrients, this is what sets the growth rate, once it start growing you will struggle to trim it down, so give it some time, a week or two, then after every week, take out the drift wood to pin down new shooting moss, after some weeks it will thick out and soon start to look very full and also keep floating offshoots. :) good luck. Also watch out for javamoss sticking into filter or corner of glass or on other plants they have tendency to attach there and grow quickly , which then makes it harder to remove.

BTW you did the right thing by not stringing full bunch of javamoss to driftwood, spreading it out and then tying is the right way, i did that wrong when started , then learned from different posts here.

Yes give it time to grow in. I have mine in a low light tank with no co2 or ferts just fish. It grows like a weed. I tie mine losely too. Once it starts to attach it will take shape and look better. Some moss looks better then others. Java moss is not the best looking moss IMO . But can look once it is growns in a lot.
