I'm wondering what types of fish have been bred to change their colors, size etc? I'm pretty certain most of the swordtails, guppies and platies that you see in stores have been bred far off from their natural colors and even sometimes size?

What other fish in shops would you not see out in the wild?

Maybe there's a pinned topic somewhere or even a site that discusses this topic already but I couldn't find them myself :look:

To name but a few... Bettas, RTBS, fancy goldfish, vast majority of fish with cranial humps, glofish, dyed fish, hybrids, most livebearers....

...with a few exceptions that are still mostly taken from the wild like cardinal tetras.
I wouldn't call that a few exceptions, as MANY fish are still taken from the wild. Any veil variety of a fish, like veil tail angels, danios, WCMMS, or oscars, are not found in the wild. The same goes for albino and leucistic varieties.
