If you just started and are going to be gone for 11 days your bacteria wont be eating enough ammonia by then anyway. Just dose up to 4ppm and then add some fish food right before you go. Then when you get back you'll probably need to do a water change as nitrites will be off the chart. But there won't be any fish in danger and you wont have to start all over. I would rather worry about my bacteria dieing off from lack of food than my fish starving or having to have someone come in and feed them and give them to much only to make a bigger mess.
PS I have found that just adding a small pinch of fish food to a 10 gallon tank will give off ammonia for 5-7 days. It takes about 2 days to start breaking down into ammonia then will take another 5 days to finish breaking down. The ammonia eating bacteria will survive for 3 days without food just fine.
