Is This A Good Choice?

in my 55 gallon tank i got rid of some fish and i am left out with the following:

1 Blue Acara
1 Convict
1 Salvini
1 Firemouth
1 Senegal Bichir
1 Gold Nugget Pleco

it runs 2 filters each up to 60 gallons, and etc.

Sounds ok, but keep a close eye on the Salvini, from what Ive read (no personal experience with these cichlids) Sal's can turn aggressive.

if the salvini stays the way it is(which i think he will) he is about 6-7" at the moment, could i add another rainbow cichlid, or will that be overcrowd

I would say your are maxed out on cichlids, if its peaceful as it is, I wouldnt add another.
