Interesting Reading From Tank

keep testing at least once a day for a while too... just to make sure you did not go into a re cycle again. This is almost what it sounds like to have such a huge spike like that. All your fish alive? If they are all there that is the only thing I can think of is the re cycle bug has hit you.

I lost my bamboo shrimp a couple of days ago and thats what made me do the test.

I woke up this morning and found all the fish gasping at the top - would this be due to lack of oxygen or could this be the poisining? Luckily no fish have died yet.
 
Your tank is overstocked, simple as that. When did you last add fish and how many?

In the meantime you have to change water every day to keep the reading for ammonia and nitrite under 0.25 until your filter catches up as it is probably not cycled yet either after the change over. Also add a double dose of a dechlorinator that detoxifies ammonia and nitrite like Seachem Prime at each water change.

Make sure you do have good oxygenation by ensuring that your filter outlet disturbs the water surface as much as possible. If that's not possible add an air stone, in fact I would add one anyway.

I last added fish about 2 - 3 weeks ago. I won't be adding more.

I had a feeling that the filter possibly might be cycling but I don't understand as I moved all the mature media from the old to the new.

I have now done another water change and have added the spray bar and this already appears to be causing more surface disturbance.

I will test again later to see if this has dropped

This often happens when a full water change is done, which is what you did when you set up the new tank. The bacteria clearly weren't happy with the difference between the old water and the new.
