how big should sailfin molly fry be at two weeks old? should they have doubled or tripled that size?

regular mollies fry grow very fast.....at least double in size

If you have true sailfins, the wild type, you can expect them to be about 1.5 times their birth size at 2 weeks with proper food and water changes.
