Hello there! I'm new to the hobby and have a new 10 gallon tank, and I'm considering what plants and fish to put in it!

I've already read about plants, substrate, overstocking, lighting and cycling. I've also read about different fish behaviors. I joined to get some help along the way! :)

Welcome! I recommend community fish to start with. Theyr usually easy to start with. Some tetras and maybe some corydoras. Remember to get at minimum 5 of each species as they like to school. the more of each the better. :)

Most corydoras get too big for a ten gallon though, so the OP must research carefully and ask advice on those.
 
Sounds like you are off to a good start with that 10 gallon tank. As far as Cory cats I myself would put no more than 2 in a 10 gallon tank. For Tetras I would look at the Pristella and the Neon Tetras 5 or 6 of each and that will give you good color to start and not overload the Bio of the tank. The two Corys in that size will do there thing on keeping the substrate clean. Just my thoughts.  Thanks

Cory cats don't clean anything. They need food of their own in the form of shrimp pellets and they seem to like occasional algae wafers.
They should be kept in groups of 6+ of their own type and only pygmaeus, hastatus, or habrosus would be suitable for a 10g.
 
Im not sure how big a 10gallon is as we measure in litres here in nz but it seems that its quite small. In terms of cory cats i have 2 pandas in my 60 litre and they are very happy. Pandas stay very small in terms of corys so a good choice. They are about $16 each here.

With a 10 gallon you need to research thoroughly what fish are suitable & ask questions here before stocking, everyone will help advise you
Corys are a shoaling fish & as such should be kept in groups of at least 6 & a 10 gallon is not big enough for normal sized corys, the 3 smaller species previously mentioned would be ok depending what other fish you might get.

Cories need groups of 6+ as they are highly social and it makes them feel safer. 
 
I would start off with a few male guppies. Prferably 3 work :3
And either neon or ember terra. both stay quite small. But make sure you get 6+ groups of ten work best but that may be a few too many for a 10g along with 3 guppies.
