After many many years of fishing (not fishkeeping), hitting a fish on the head with a priest would be no problem for me, it also seems to kill them instantly if u use enough force. Thankfully ive not had to do this to any of MY fish tho..

I to was a coarse fisherman for many many years and fished with English world champions (Bob Nudd and Des Ship) and if they ever killed fish they would do it by hitting the fish on the back of the head sharply, you'll know when youv'e done it, there eyes bulge from there head which means there dead.
