I like to have a wide variety of foods to feed my oscars, and also beneficial to their health. If I cut off the pinchers on crawfish, will they eat them? I have heard Oscars enjoy this.

i bought ten crayfish or crawfish for my oscar, he ate like three of them and then gave up. So i'd suggest adding them one at a time, and not buying too many at once. Also if the oscar doesn't eat the crawfish and more than one survives in the tank they get territorial and start hording food, which can effect the water quality.
They don't seem to hord food if only one is kept though.

Do they bite right through the shell?

You betcha,
its pretty cool to watch as mine came in and picked the claws off first before crunching the body. Somehow cramming the hole thing in its mouth, it can take some time for the fish to swallow (like up to 10minutes)which is another good reason not to put too many in at once as the fish is pretty defenseless with a mouth full of craw.
