The colour varieties are the same species, so expect "normal" dwarf gourami behaviour from all of them. In spite of its "dwarf" name, this species can be a bit feisty. Males will establish their territory and defend it in some manner, depending upon the individual fish. But with respect to your question, a male powder blue or a male fire would both be capable of fairly rough action if the mood strikes them, and being male would mean they are or could carry this out equally.
Gourami and cichlids are very similar in this respect, of male territoriality and roughness. A bit of pushing and shoving is usually not a problem, but an angered male gourami can kill a rival or a female within hours if not minutes, again depending upon the individual fish's temperament.
