Darkening Of Colour ?

i have 3 honey dwarf gourami in my tank, 1 male and 2 females

the male seems to be mostly fine but has got darker from his bright red/orange colour

the females were quite white when i got them but they are now going darker, grey ?

i feed them on Terta Pro Colour, Tetra Pro Veg, frozen food cubes (mixed), and sometimes live bloodworm

they are in a 180L tank with some Danios, 1 Ram, a Plec, 3 Platys, and 2 Oil Catfish

they are not being bullied and seem fine/happy enough

sometimes all of my gourami will go to the surface and blow bubbles but they dont seem to be gasping and only do it for a minute then swim around as normal, they do this a couple of times a day
 
Darkening isn't usualy a bad sign and male honeys will darken considerably around the ventral area until they have a blue-black underside (when in breeding condition). Blowing bubbles is quite normal for healthy gouramies - if you mean bubblenest-building. It tends to be the males that engage in this but females do sometimes join in.

To be on the safe side, do you have any pictures? Prefferably some 'before and after' pics for comparison as it can be difficult to interpret colors from a photograph.
