The less you feed, the less ammonia is produced by the fish, and therefore the less nitrite converted from the ammonia.

However, this isn't a way of bypassing water changes - they are the only way of keeping nitrites at an acceptable level until the filter grows enough bacteria to eliminate the nitrite completely.
 
if you have nitrITE in the tank that registers on a test then there is something wrong....

is the tank cycled?

have you added any new fish at all?

have you removed the decor or changed substrate at all?

the more you feed the tank/fish then the higher the ammonia levels will be due to uneaten food and waste from the fish. higher ammonia levels will need larger amounts of bacteria for the higher nitrITE levels that will be produced.

if you are getting nitrITE readings then the best thing to do is large water changes to suit the raise in nitrITE and continue this until the bacteria in the filter has caught up with the new bioload.

thanks lock man. striped the tank right down donig fine whent three days then the nitrie up hence the big water change
