Cycling Going Well?

Nitrite: 0
GH: 75
KH: 80
pH: 7
Ammonia: 0

It started a week ago at:
Nitrate: 40
Nitrite: 10
GH: 75
KH: 80
pH: 7.2
Ammonia: ???(no test)

Miraculously, through all this change, none of my fish have died (a couple have gone through slight stress it seems)

Should I stop doing 10% daily changes when the Nitrate is a definite 0?

YOu will have a hard time keeping your nitrAte at 0. When your nitrIte is at 0 you can go to once a week. Depending on the fish, your nitrates can stay anywhere between 5 and 40ppm.
