You'd have to use a boat to get to somewhere you could walk the dog. I would wager they bring their water in - land seems close by. Either that, or the ultimate python stretching across the strait.

If availablity of freshwater is holding you back from making an offer, Florida has a massive aquifer, over 100K square miles, that is quite close to the surface. The house probably has a well.

I wonder how big a personal, solar desalinization device would be. I'm guessing it wouldn't have to be huge, except, oh yeah, there's a freshwater swimming pool.

I would bet the pool is SW. Hauling that much drinking water out there to keep it filled is a PITA. And the reason they have a pool is really simple. There are no sharks in swimming pols.

True, but it's brackish water.
But there's hope, perhaps there's an industrial RO system in that small building next door. Fresh water with pH 7 and dGH 0 is a must for that fancy pool !
There may also be a pump in there to extract sewage and package it up in neat drums to be transported to where they should go . . .
