If there was anywhere the fish could have jumped out of the tank and it may have done that as it is known to happen; check all around the tank area just to make sure.

Sometimes fish jump, then get consumed by a passing animal. It has been known to happen.

They can also jump and wriggle their way behind or underneath furniture. You might want to look...before she starts to rot.
