I was wondering if it would be ok to add some bamboo shoots to one of my tanks? I thought I migt add some tall ones to my ten gallon and have them sticking out at the surface, just not sure if it is safe to do.

Not a good idea. They tend to rot after a while. There are some ways to make it work, like having none of the leaves under the water, but there are plenty of plants in trade that are actually fully aquatic.

As Onidrase said, there will be ways to make it work, if you could only submerge the roots it would be a type of hydroculture - It would probably take more setting up than it's worth tho.
There are aquatic grasses and stuff tho that you might like, I just found "Equisetum hyemale"
Another place to look are the "Non aquatics" you find in your LFS, they're more often than not suitable of emmersed conditions :good:
