Any Plants That You Just Cannot Grow?

I'll start, my nemesis' are Staurogyne SP & currently struggling to get my Hygrophila Pinnatifida to grow, app they're both easy too lol.
 
My nemesis: Carpeting plants.

I have spent way too much money on almost every type just to watch them die, or not shoot up a new blade in six months+ I'm trying the most hardest out there right now (UG) and I'm a week in but my luck isn't that great so we'll see...
 
Carpeting plants I don't seem to have a problem with touch wood, UG is a beautiful plant BTW, I want some of that for my next project. Don't understand my plants, I have high light, I dose everything and I'm about to swap the Carbon for pressurised CO2 this week but oh well, we'll see.
 
Oddly enough, Java fern for me. The leaves start spiking almost as soon as it hits my water.

OH,I would like to add a more difficult plant that I had issues with...Rotala sp. ''Nanjenshan''

Are they new? Sorry this was just meant to be a kind of wonder I had in my head as some people have trouble growing simple plants like myself but are able to grow more difficult ones which is strange, could be kind of an advice thread too I suppose?

Twisted vallis for me. I've given up on it now; maybe my water's too soft, though the normal and giant types do fine :(

Any changes in water at all? sometimes a slight change can get these to do that, like crypts really.
