So i was thinking it might be cool to do a winterscape in a tank. Is there any fish that wouldnt get stressed on white sand? I would want the scape to be the focus more than the fish, with only a few fish.

Also if I coated some little trees (the kind you get at hobby modeling shops) in resin would it be safe to put in a tank?

I have white pool filter sand in one of my tanks...but also have lots of driftwood and plants....fish get used to it I believe. I have tiger barbs, cories, a BN pleco and a bolivian ram in the tank.
One bonus is PF sand requires very little rinsing.

yeah. Ive just head that most fish get stressed on a pure white substrate. I was thinking small white fish or ember tetras or chili rasboras... kind of to look like cardinal birds in winter

You can also let algae grow on the substrate.

There are a couple of white strains of some plants available now too like Anubias and Ludwiga. The Anubias needs lower light to stay white and the Ludwiga needs high light and Co2. Some Camboba or Hornwort would look like fir trees too.

An Iwagumi style tank would work real nice for it :)
