African Cichlid Tank Temp?

Hello it's been awhile since I have posted here but I remembered that I had once found a great fish forum full of people that new what they were doing and it looks like I have found it again.

I have a question concerning my African Cichlid 42 gallon tank. Im wondering what the average temp should be? I have 3 medium sized African Cichlids and a pleco and a large amazon catfish in the tank currently.

Also im about to setup a 55 gallon tank, and am wondering how I go about testing nitrate and all that b4 I actually put fish in. Do I have to buy all this test stuff? Im not sure exactly how to do it all.

The temp should be around 78F, as for the testing water quality get yourself a kit to test the PH, Ammonia,
Nirite, And nitrate. The test tubes are much more accurate than the strips.
