A Daft Question

I would say they that they have more as fish like corys are always scavenging for food therefore eating more and producing more waste

i could be really wrong though lol
 
I have some otocinclus catfish in with platies and a guppy. They seem to poop about the same amount to me then again it's hard to see because the otos are so shy they are usually at the back of my tank hiding.

Ammonia does indeed come from biological processes more than from waste material. The heavy bodied cory is just that, it has a heavy body compared to say a molly or tetra the same length. That means it uses more energy and produces more chemical waste. Excrement is not the only form of waste and is not the main source of ammonia.
