Cheers MaD. If the species I mentioned will get along ok with little risk of interbreeding then I an happy to go with them. My water is 7.2, so I guess I could add a little to my filter too! Thinking of using coral rock anyway, so that too may act as a buffer.

How many of each should I start with and how many should I end up with? I want a happy medium I guess, not too empty but not too full. Also, which fish first?

Thanks.
No the species you mentioned will be fine together, no chance of them interbreeding. I meant the 3 species i mentioned before :p
Would add a group of at least 6 maybe 3 of each species, see how things settle and then add to that to get 2 decent sized groups. If your wanting it to be in between (not to full and not to empty) Id go for a maximum of 15 fish, do bare in mind, if you are not stocking heavily there could be some signs of aggression and the odd fish could get singled out and bullied (not forced to happen mind you). If this happens then id say add a couple more to each group to bring the maximum number up to 20. Although as long there is enough females and 2 to 3 males of both species i doubt there should be to much trouble. These are mbuna though (moody little things lol)
