This is a very helpful site, you just have to take the advice. Yes people do have there own opinions, however you will find they are usually informed and knowledgable opinions.

Fish stores are there predominantly as a business, to make money. You have to take responsibility for your own purchasing skills. Like it or not, it's not their problem, it's yours. Also, that response had some pretty uneccessary attitude to it, in my opinion.

I would think you'd be looking at 60 - 70 gallons. You may find more help in the New World Cichlids section.

They should be fine for a week, I wouldn't worry about it.

Personally I would just make sure they are well fed in the run up before you go away, and then just leave them. They should be fine for a week. Them feeding sticks / feeding pyramids are often detrimental to the water quality and cause more problems than they are worth. That is my opinion anyway.

How long are you going to be going away for?

It may be a bit far for you, but Britains Aquatic Superstore in Bolton is pretty good, in my opinion. (Edited for typo)
