it goes on about a beneficial spiral that lets the gas stay in contact with the water longer
yet the water is nowhere near the spiral! has anyone got one?

I'm assuming that you have the diffuser actually in your tank (silly question I know) but what do you mean by "the water is no where near the spiral?
The spiral is beneficial not only becasue you can phyiscally count how many bubble pass through it (therefore doubling up as a bubble counter) but it also means the C02 is in contact with the water for longer, allowing for a higher rate of diffusion.
