What Tank Would Be Suitable For My Desired Stock?

I know I'm going about this in an odd manner. I'm going to list my ideal stock and see what others recommend for a tank size and model, as well as filter and lighting 
 
I'm not getting said tank or said stock anytime soon, it's just a goal to save up for.... for that matter so is living room furniture for my new house rofl

I'm not really certain of the stock I want as it is, but I had a vague idea; it will probably require lot's of re-working because of compatibility and water conditions and such, my pH was rather high at the old house, 8. and it hasn't improved much in the new house. It's 8 out of the tap and 7.8 after 24 hours. So GBR's are out

And I'm going to have to re-home the one I have, even though he's doing fine I feel bad that I've made him adapt to a pH that is so out of his optimal range)
 
 
I know most people will suggest I go Cichlids, but they don't hold much interest for me, I'm stuck on tropical communities

As I stated, I'm not sure exactly what I want...
 
I was thinking something like:
 
Center piece:
 
- 2 Angels (Hopefully a mated pair, but if I started out with a larger group of Juvis, like 4 or 6 and then kept the pair I liked best as they matured)
OR
-a few Gourami of some sort 
 
Schooling fish
 
-6-8 Cherry Barbs or some other type of schooling barb? I don't want to go with overly small fish as I think I've read some where that Angels like to eat smaller fish. Are Cherry barbs in that size category?
-I was hoping for another type of schooling fish as well, possibly another, different kind of barb, or possibly a Danio or tetera pretty open here

-4 or so Platys (I have a soft spot for platys so shush!) I don't know how they'd do with the rest of this stock list but I hope they could be worked in

Bottom Dwellers:
 
-6 Panda Corys
-6 Juli Corys
-1 or 2 BNP
 
 
I know it's not really a full stock list, as I ask for suggestions and all.I was thinking a 75 gal would have enough room for this stock, but that's just a rough guess on my part. 
 
I'm a goal driven person so I'm more likely to save for this if I know what my reward is

so I want to write this down on a sticky note and put it on my mirror or something lol. 
 
 
 
My PH is around 7.5 or so, both API tests give me max or low PH, and minimum for high PH and I have a GBR and he's fine
 
I wouldn't rule out the GBR's. The PH of our water is 8.2 as is that of the LFS we bought our GBR from. Come the 8th of this month, the GBR will have been in our care for a year. There is, apparently,  a train of thought that if fish are bred in water with such a high PH and grow up with it then they will be fine as their systems will be adapted to it.  And I can honestly say our GBR is just that - fine and thriving. He is a nice fish with a little bit of character to him.
 
If you want GBR's, then check with the LFS you intend getting them from to see what its water parameters are and then compare them with your own.
