Ok so I've got 6 20 gallon tanks built onto a stand all with good filtration. I've also got a 63 gallon with sump built on a stand ( Very good filtration) I've bred convicts before so anything at that difficulty( I know convicts are VERY easy to breed)

You could try something Similar to Convicts like Honduran red points or T bar cichlids or maybe Rainbow fish. Personally i would go for a dwarf cichlid, Maybe a dwarf pike like Crenicichla compressiceps or Crenicichla regani or one of the rarer types of Apistogramma, you could keep a trio (1 male 2 females) in each.
 
german blue rams, angel fish, firemouth cichlids, severums, mbuna cichlids. all fairly easy to breed just need a pair that formed on thier own accord :)
