I feed mine Atison's Betta Pro and he goes totally nuts over it. Generally everybody feeds them pellets as the main staple. Bloodworms or brine shrimp (live, frozen or freeze dried) as an occasional treat, no more than 1-2 times a week. It's good to skip one day and then feed a cooked pea (shelled and minced into tiny pieces), as bettas can get constipated and the fiber in the pea helps move stuff through the system. Another way to help prevent constipation and overfeeding is to soak the pellets for a few minutes so they expand before they get into the betta's stomach. You can feed a bit and then literally look at his stomach. It should just gently expand and not look bloated. Also, if you can feed smaller portions twice a day instead of all in one go, it might go better too.
But I find that they are each a little individual. I am currently feeding two betta fish (one mine, one someone elses). For both of them I am presoaking the pellets. My betta is totally fine just with the presoaked pellets and I don't have to skip days or feed peas at all. I just skip a feeding when I see he is still full and occasionally feed a pea for fun. On my friend's betta I HAVE to skip a day at least once a week and feed a pea weekly or he gets all "plugged up". And I briefly had one betta (and heard of others) who, once they tasted live worms, simply refused to eat anything else. But don't let him black mail you... The only way for them to get complete nutrition is to eat the pellets.
