My LFS don't have them in the coldwater section, only the tropical. I want them for a species coldwater set up, would it be ok to get them from the tropical waters and put them in warm water but let the water settle to room temp? will they be ok cos it's not what they'll be used to
 
Yes, with good acclimatisation, they'll be fine.
They way you suggest; adding them into acclimatised water and letting it cool slowly seems fine.
 
Float them over a few hours to let the water temp in the bag match that of the tank, then try to mix water from the tank into the bag slowly, to let them acclimitise to your tank water.

They are essentially coldwater fish being from cold mountain rivers in china :)

I wouldn't advise floating them for a few hours, Unless it was a large bag they were in. I don't float new fish, I just put them straight in, No need to cause more stress than necessary. I would say it causes less stress putting them straight into the tank than it does floating them in a bag that is filling with ammonia and other harmful things.
 
WCMM's are techincally sub-tropical fish and not coldwater or tropical, they do best in temps 19-23 degree's in strongly filtered tanks. If you have non-fancy goldfish in your coldwater tank, the WCMM's will almost certainly be eaten by the goldfish as the goldfish grow.
