I want to try my hands at a having real plants in my tank vs plastic.

Two possible problems:
1. It is my African Clawed Frog tank and they have a tendency to be enthusiastic swimmers and kickers
2. I have sand as a substrate.

What type of plants can I try and how can I ensure healthy growth?

i would try some anachris. its easy to grow plant even when its not planted in the substrate and its relatively cheap in my area. (in fact i got a big bag of someones clippings for free). of course as we all know be sure to never introduce plants, especially anachris, into a natural ecosystem.
