Unipac Silver Sand, Should I Go For Fine Or Coarse Grade?

Not sure what to order fine or coarse, the tank will have plants and cory cats, what would be best? Would the coarse still be cory friendly?

I concur.  I do not know this brand [I assume this is the one: http/www.unipacpet.co.uk/aquatic/aquarium-sand/ ] but make sure it is smooth if corys are planned.  Rough sand will cause issues for them as they dig into it and as they sift it through their gills.
