I want to switch my 55gal over to planted. Right now I have about 5 plants in there and a bunch of plastics. I am under the impresion that you can not just plant over night when you all ready have life stock in there am I right? If I am how many plant and how fast should I go?

Plants help your biological filtration, put as many plants as you want at one time. The more the better, it'll help with algae as well to compete with it.
 
There is going to be no problem when you add plants. If you are switching substrate, then I would maybe switch half at one time, then wait a week, then switch the rest. You could possible do it all at once if you have a large filter with lots of biological media.

as IovaykInD said, plant as many as you want.
Make sure you have appropriate light, fertilization, etc before though, so you don't waste money buying plants then letting them die
