So i started out with normal cherry shrimp, nothing special, just plain old cherry shrimp. After a while i noticed some deeper red ones appearing so i collected those ones up and put them in another tank. After a while these started to breed and more and more deeper red ones appeared. Now they look like this. Not sure they can be classed as cherry shrimp anymore?

Yes they are still cherry shrimp and by the looks of it what would be called fire red cherry shrimp, keep up the good work of selectively breeding and their colour will get better and even extend fully onto their legs.
In one of my tanks I ended up with rilli cherry shrimp spontaneously appearing so it proves even from "low grade" shrimp you can develop high quality.

I have the same thing happening in my tank, most shrimp I got were low grade ones, then after a few moults they started to show deeper and deeper reds, eventually found 2 of them which would classify as fire red!

It's so much fun seeing happy creatures in an aquarium!
