I just got a dwarf gourami and I don't know the sex my lfs people have no clue it is blue with red stripes and has a spiky dorsal fin if it is a male what defines a female because I need one next week

Male dwarf gourmais are the brightly coloured ones. Females are a very pale silvery colour, and you'll only be able to see a hint of the stripes from certain angels. Some LFS don't stock females as they don't sell as well as the males.

Oh, and you should get two females for every male :good:

The males have a pointed dorsal fin and the females have a more rounded dorsal fin, plus, are more rounded in the belly and paler in colour than the males. Males have very intense coloration compared to females as well...but this can be hard to determine if the fish is under stress.
