2 feet deep will require quite a lot of lighting. The usual guide of 2 Watts of fluorescent light per gallon will probably be a little too small at that depth. I'd aim for something like 100 Watts. Use full spectrum lamps, (5500K - 6500K), for 10-12 hours a day. This will be "Medium" light.
With that, browse the plant list at
Tropica looking for plants that match your water chamistry, demand "Medium" light and are classed as "Easy" or "Very Easy". That way, you won't need to worry about CO2 injectors etc.
It is difficult to say how many plants to get, so much depends on the type of plants you find that match the criteria and your personal taste. It is difficult to overplant, but be aware that tall plants can shade lower plants when making your choice.
There are a lot of non aquatic plants around sold for aquarium use, be wary of anything not on Tropica's list, espeacially if it is woody, or has extravagantly marked leaves.
