I got the final fish for my community tank last night, a pair of Rams.

Get them home, and of course within hours the smaller, paler of the two colours up - it looks very much like I have two males.

The tank is a 180l, 3' on it's longest side. There are plenty of 'unclaimed' hidey-holes. What are the chances of the two co-existing peacefully? Should I try and get them both mates, or return one of them and try again for a female?

Thanks, they seem OK for the moment.

Is 180l large enough for two pairs of Rams?

I would say no on the two pairs of rams. The two males should be able to coexist in the 180ltr. If you do have plenty of decorations and caves and the such, then they should be able to set-up their own territories with minimal quarreling though you will see a few jaw-locking contests as this is just natural cichlid behavior to show eachother who is stronger:good:
