Sorry  if this is a dumb  question but  , im a bit confused about live plants . I bought some  potted aquauriam  plants  but have seen some  u tube  video suggesting you should remove pot and split plant up before placing in the sand . 
Is this correct ? There were open plants in shop but i paid more for potted ones thinking that was how they were planted

Yes remove them from the pots it will help root growth and is better for the plants. Normally the loose plants u see in the shop are cheaper less sort after species. The potted ones are much better and also you normally get more in the pots in my shops thats the case.
 
The pots also allow transport without disturbing the plants too much. The bundles you find are generally the stem plants that are less reliant on a stable root system to take.
 
Keeping the pots on tends to stop the root system from developing properly.
 
also the stuff in the pots tends to be fiberglass and makes the fish itchy! I like to get rid of it and rinse off the plant really well to avoid that.
