Plexiglass

It's almost impossible to find a 5 gallon without a "kit" (filter, heater, etc.) here, and those are around $50 at Wal-Mart and PetSmart.

I've got a 10 gallon (nice, heh, 10 gallon for $10 and a 5 gallon for $50. I think I know which one to get!). Can I use plexiglass to divide it into 5 gallon portions, or will it kill the fish?

i believe plexiglass is just a brand name for acrylic so you are fine.

Cool. I'll head to Home Depot and get some. Hopefully they have some that's tinted, so they don't try to flare.
