A good place to start with the ferts would be TPN+. A moss carpet would work well under low tech conditions - some bits of slate, or plastic mesh weighed down by smaller bits of slate with moss tied to it, give it time to grow and it looks really good.

Agree with Ian if you want iwagumi then stay away from huge plants. The whole point is that they're minimalist. The trend doesn't hold if it's really busy with multiple plant species or really tall plants towering over everything.
