Oxygen Off Plants?

When i was in the ADA showroom, i was fascinated to see oxygen bubbles sitting on all the plants and the grass in the aquariums! This was before i started my planted tank

My tank is up and going, all looking great, but no oxygen bubbles (other than after a water change!). So, what is it that allows my plants to produce so much oxygen that it creates bubbles?

I wish I could help but I have been wondering the same thing. I don't run CO2 in my tank nor do I probably have enough nutrients or lighting to require CO2. However, I believe that the amount of lighting, making sure the plants have the right amount of fertilizers and the CO2 all play a part in the plants pearling.
 
It depends on which plants, how high your lighting is and how well the plants are fertilized. I have a 6 inch glass cube with moss and hairgrass, no ferts, CO2 or filtration and it sits on my windowsill producing bubbles (pearling I believe) all day in direct sunlight with no algae at all (which is strange, no algae that is lol).
 
It is when the rate of O2 production is greater than O2 absorption, or when the water is saturated, therefore the O2 has to form as bubble.
To achieve this you need fast growth, which is generally why you only see it in tanks with CO2 injection.

You get pearling after a water change because the plants have been exposed to unlimited, atmospheric CO2, and the tap water is highly saturated with gases so these factors produce pearling.
