Nitrite Issues-- Which Tactic To Keep Them Down?

10 gallon tank has been set up for 3+ weeks, cycling with one platy in. The last several days I've tested the ammonia, it's been down to 0. I've been struggling with high nitrites though. I didn't realize until the other day that water changes weren't helping the nitrites because my tap water is bad (5+ ppm straight from the tap. dealing with the municipal water company, but that's another matter.) So I've been using a mix of RO water and tap water (was told not to use all RO water because of the lack of minerals in it, but the nitrites in the tank still aren't coming down.

I'm sending my husband to the store this afternoon for one of two things (or both of them?): Prime to help detoxify the nitrites, or some sort of aquarium buffer to add to the RO, so I can use water changes to keep the nitrites down. What's your opinion on which way I should go?
 
RO with a freshwater remineralizer (dont even know if that's a word), something like Kents RO right. I don't know where you're located, so the brands may be different.

I'm in the middle of the US, 2 hours' drive south of Chicago.

ETA: Found Kent RO Right online. I'll get some ordered right away. Thanks for the recommendation.
