Newly Set Up Tank Problem

Hi all. I'm new to the forum and unfortunately my first post has to be about a problem.

So I put my first batch of 7 rummy nose tetra in my newly cycled tank on Saturday and it all seemed to go pretty well (although I now realise I was supposed to fully stock my tank straight after the cycle had completed!). The fish lost a bit of colour in their noses which I put down to the stress of moving them from the shop to my tank. Then all day Sunday they were fine and the red in their noses got much more red (I assumed they were now feeling a lot less stressed and feeling more at home).
I tested the tank before bed last night and got the usual results of 0ppm Ammonia, 0ppm Nitrite and between 20-40 ppm Nitrate so I was happy that all seemed good. However, I woke up this morning to find that one of the fish had jumped out of the tank (and was obviously dead on the floor!!!!!!!!!!!!!!!!) and another was swimming around extremely erraticaly (sp?). The other 5 had completely lost the redness in their noses.
I got home from work and another has gone missing (I only hve a 55L tank but still can't find it). The other 5 have now got a bit more redness to their noses again and seem quite happy.

What do you think could be the cause of this and do you think I need to worry about tonight? I have live plants in my tank and wondered if maybe the fish had been struggling for air during the night but they weren't gasping for air at the surface.
Is there anything else that happens during darkness that maybe I haven't read about yet??

I'm gutted because I thought I had spent so much time reading all about this before actually setting up my tank that I shouldn't have had these problems!

Any help would be very much appreciated.
 
PH is about 8 which is the same as the shop that I got them from.
 
It would not be terribly unusual to lose a fish or two out of a batch of seven. Some fish don't handle the tank transition very well, plus you don't know what kind of history they had before you bought them.

Is it possible to cover the tank until you figure out if any others are going to jump?

Otherwise I would continue testing for ammonia/nitrite/nitrate/pH daily just to make sure things are steady.

What are the measurements of the 55L tank? Just wondering how much length they have to swim. I thought Rummy Noses like a bit of length.
