So I'm planning on doing a pretty comprehensive rescape to add a bunch of live plants. Some of the things that I'd like to do, such as attach anubias and java moss to rock / wood I know that I can do outside of the tank as it will be easier for me and less disturbing for the tanks inhabitants. My question though is would it be better to try to remove most of the fish before doing a big rescape or just be careful with them in there? I almost feel like removing them and then putting them back in however long later would be more stressful for them in the end. I only really plan on reusing two pieces from inside the current tank, so I was thinking maybe get my attached plants ready to put in, then remove everything from the tank and add pieces back one by one?

What have you had success with?

Hmmm...have not considered this before. I always just rescape with the fish in the tank so that they don't have the stress of being netted. I just try to be extra careful that fish are not in the items being removed, and do not get covered by what is going in!
