I was gonna say I hope mine turn that colour, but I think not now lol

No, the colours in the picture are there adult colours,

But I believe when they die, they go pink, due to carratines (spelling :S ) in the body.

Mine have been this colour for about 18 months now :D

This may have come about because as shrimp get closer to shedding their exo-skeleton, they get darker colours. So, it may be possible that someone noitised that his shrimp was getting darker (in other words closer to moulting), then it either died or shed its skin and was eated whilst still soft, leading the shrimp keeper to think that when shrimp get darker, they are close to death.
Just a theory.

saw some mini ones at the LFS now gonna go back tomorrow and get some, didn't know they were so beautiful :good:

Thanks everyone, my shrimp are about 9 months old, I don't know what their lifespan is but they look very good at the moment and have grown to just on 2 inches, nose to tail fin tip.
