Kuhli's And Or Gold Dojo's

Once I switch my substrate, how many kuhli's or gold dojos can I have for a 30 gallon tank, mind you, there will be 3-4 swords and 7 platys already in residence

1/2 dozen kuhlis or one dojo. Dojos can get to a foot long and really aren't tropical fish. Would prefer conditions similar to goldfish.

Dojo/ Weather Loaches grow pretty quickly, my eight (because they are very social) rapidly grew from slimline ~6cm fish into chunky (thickness of my index fingers) and ~15cm in just 7 or 8 months. In the daytime, they would burrow into the sand of my 5x2x2 in the shady spots, but come lights out they could be seen doing lap after lap midwater. They are far too big and active (when you are not likely to be up) for a 30 gallon.

I eventually rehomed mine last July, because eight chunky ~15cm fish and still growing were going to place a massive strain on my FX5 and APS2000EF bacteria colonies, as I also had various Asian and African riverine fish in with them.

As for Kuhlis, get 10-20 of them, they add very little bioload and a huge group is much more likely to show their faces (especially if you provide lots of reassuring cover for them).
